I live in a very small town in the Pacific Northwest. Usually, I have to travel for interesting and unique food. I was beyond excited when I heard about a new, local restaurant named Argensol… Authentic Argentinian food had come to our town!! I stopped by when they opened and was very curious about the menu. The owners were amazing and answered all of my questions about recipes and preparations. Food is served quickly, take away style, and the menu is limited but it is all delicious.

I started with the Potato Bombs. Crispy on the outside and soft and gooey on the inside. I chose the spinach and cheese option. I was told by the owner that these were smaller than the ones she often ate in her country and that they were usually served with salad, as a meal. She explained that they wanted to provide the experience of the Potato Bombs to customers so they made a small version to serve as an appetizer. I can’t wait to try the other varieties!

The empanadas were amazing. I opted for the beef, the chicken, and the spinach and cheese. They are perfectly flaky on the outside and bursting with flavorful fillings. Breaking them open to reveal the smell of all the spices is my favorite way to eat them.. and it helps them cool so I can eat them faster lol!

For dessert I had Alfajores. A traditional sandwich cookie made with shortbread cookies and a filing of dulce de leche. I wanted the chocolate one of course! I was told chocolate wasn’t traditional but she wanted to provide an alternative for those who wanted some chocolate for their dessert.

The shortbread cookie was so soft that it melted in my mouth instantly and the filing was sweet, rich and decadent. There is no way I could have eaten another one, it satisfied all my sweet needs but I should have brought one home : )

I can’t wait to go back to Argensol, my goal is to try everything on the menu! The staff and food exceeded all of my expectations.
