Grandma Pat’s Egg Custard Recipe
2 slightly beaten eggs
2 slightly beaten eggs
1/4 cup sugar
1/8 teaspoon salt
2 cups milk, scalded
1/2 teaspoon vanilla
Instructions
Combine eggs, sugar and salt. Slowly add milk and vanilla
Pour into custard cups, sprinkle with nutmeg.
Bake in pan of hot water in moderate oven 325 degrees until mixture does not adhere to knife, about 30 to 40 minutes.
Serve warm or chill and serve cold.
Serves six
Variation for Rice Pudding: Add 1 egg and increase sugar to 1/2 cup and a one cup cooked rice.
Bake at 325 for 30 mins and turn up heat to 350 for 30 mins.
Test by sticking dinner knife straight up and down in center of pudding. It will come out clean when done.
